I tweaked my refrigerator dill pickle recipe by adding sugar to the brine and was super worried I may have just made 11 quarts of inedible pickles. One thing about pickles is you can’t really try them right away so you just don’t know. The recipe I was using was very good but REALLY tangy so I wanted to tone it down a little bit. So far I’ve picked over 20 cucumbers and made 3 quarts of dill pickles and 2 quarts of dilly beans. So far I’m managing to keep up with the zucchini and only one hid long enough from me to become a giant. My beats and carrots are doing well but I’m really looking forward to my tomatoes this year for canning too. Well we did manage to get a little bit of rain and our highs are finally down into the 80s but dang, I hate to think how hot August is going to be if this was what we faced in July. I just couldn’t keep up watering my trees as I had to do it by hand. I didn’t have the water pressure that far out to set up more than one sprinkler and that just couldn’t cut it over an entire acre. She only lives a quarter of a mile from me so I think its safe to say the lone bear who visited me (who I was calling a “he”) was actually a she. I got them as early as I could Friday morning and still managed to get to work on time. After that I’m thrilled to say I started planting after work on Friday and I got them all in the ground over this last weekend. He had a collapsing trachea and it just got so bad so fast. Poor Link couldn’t breathe. I took him in on an emergency vet visit and they did all they could and it didn’t help at all. And I couldn’t take him home when he was suffering so much. I wish I had had more time with him just the two of us. Mama and baby are healthy and doing good. Little one was not so little coming in at just under 10 pounds lol They named her Apphia which is pronounced like a combination of Athena and Sophia… if that makes sense. I really like it! I heard on the radio here on this same day the record low was 82 degrees colder than that lol. This “warm” weather though is making everybody feel better and losing the snow is helping too. My Mom told me they were having a “surprise” birthday party at her house for me on the 21st so I acted surprised. It being on a weekend only three days before my birthday made it pretty obvious… On my actual birthday my sister in law was due to give birth but, so far, my new niece or nephew is still biding their time. It was -35 when I went to bed one night and was still -27 when I started my car to go to work the next morning. I felt bad for my car lol. The news literally issued a warning of exploding trees. Besides the typical chores I also got some blackout shades hung in our master bedroom. I know Lodi will really appreciate it as he basically has a night job and our curtains don’t block much sunlight when he’s trying to sleep during the day. Welcome to the To Grandma’s House We Go Link Party #464. We had a very short notice part at my place this weekend that had us scrambling a little bit but I think we hit it out of the park. I grabbed this 40ft slip and slide for all the kiddos and it was a total hit. Between one of my eldest nephews and me we picked up 600 water balloons at walmart and promptly ran out within an hour lol. I can’t believe to fill water balloons anymore you just hook them up to a hose and watch them tie themselves when their filled up. Very different from when I was kid! Now, on to the party! I don’t think its a record or anything but it certainly is a lot for us for July. Over the last few years our summers have been one thing consistently: DRY. After winter the first thunderstorm just sounds so wonderful! Welcome to the To Grandma’s House We Go Link Party #423. Our dog Annie finally got her stitches out after having her back leg amputated due to bone cancer a couple of weeks ago. To say our entire household cheered was a bit of an understatement. (Living with a dog who has to wear the cone of shame all of the time is a trying experience to say the least.) No one was more ready than Annie though to be able to use the doggie door again and get all of her independence back. Fall is definitely showing though, our lilac bushes packed it in a long time ago and all the rest of our greenery is quickly following suit. I sure did miss my garden this year but I had several gardeners take pity on me with boxes of fresh produce given to us. Welcome to the To Grandma’s House We Go Link Party #360. Well we did get a tiny bit of rain and got to hear a real thunderstorm for what I remember to be only the 2nd or 3rd time this year. We seem to be in like a bowl, all around us is getting so much more rain than we are, its pretty strange. We need it so bad, our yard is completely dead at this point lol. We even picked up a couple of bales of hay for our horse so he’s got at least something to work on. To celebrate we went back to the national park where we said our I dos on June 11th of last year. It was quite the different trip this time though lol we camped in our little tent, ate some amazing food and just chilled out. It was an amazing couple of days, we biked and even rented a pontoon and puttered on the lake for a couple of hours too. It was wonderfully relaxing and a much needed break for us both. I think total count was nearly a foot of snow – it came down so hard it almost looked like it was pouring rain outside. I got out the heated bird bath and we put the tank heater in our horse’s water tank. I purchased the heated water bowl for the birds and still am just amazed (though I shouldn’t be) at how much the birds and little critters appreciate it throughout the winter. Of course I spent most of it working lol I helped my dad install a new pressure tank in his house and he helped me cut out an access door between our new garage addition and our existing garage. Total count was nearly ninety people all together and one absolute certainty: BOUNCY CASTLES ARE WORTH THEIR WEIGHT IN GOLD! So I’ve lived here for nearly 7 years now and the enormous trees we have all over our farm and close to our home have always been a source of happy for me. That is until this year anyway! We’ve already lost three trees! So far we’ve been incredibly lucky though. The pine that fell on our garage did minimal damage despite literally landing over the entire roof. And this weekend we lost a huge oak that fell down in what can only be described as miraculously away from the house and between two other oaks without causing any damage… Now I’m looking at our trees with a certain amount of dread… lol hopefully our weather will calm down a bit! Unfortunately we even ended up with a tree blowing down on our garage! I am so proud of him… I’m not a runner lol. He did 13 miles is just over 2 hours and finished about 600 in a pack of over 1,700 people. I am so impressed with his persistence and discipline to keep on training for so long! I felt so bad for my poor little car lol I plug her in and she’s snug in the garage but that is SERIOUS cold! Our bird feeders are packed with every little critter around including bunnies and there is no fighting, no chasing anybody off of the feeders or anything, just little creatures trying to stay alive. So great to get the house back, to pack up all the decorations and step in to the new year. This last weekend was BRUTAL here in northern Minnesota. Saturday we had a high of -10 and wind chill lows hitting nearly -50. We did not leave the house and were suddenly glad for the two feet of snow acting as insulation for the whole farm. Reporting in from northern MN where we just got a WOPPING 15 inches of snow over 24 hours and am currently looking outside where it just started snowing again… *facepalm* We’re looking at getting another 5 inches by tonight and we’ve already crushed the snow totals we got ALL of last winter lol. I admit it, I got a little claustrophobic getting up Monday morning and being entirely snowed in. From just a few inches to adding over a foot over night is pretty dramatic! We had a few people over for dinner on Sunday and were chilling in the kitchen when suddenly: SNOW STORM. Total giant flaked blizzard almost completely obscuring our yard! It quit within half an hour, the sun came out again, everything melted and we all just laughed about it. We had a lovely time this last weekend going to see Eric Church a few hours away and then enjoying bumming around and playing hooky for the majority of the rest of the weekend. We did (and are still completing) several big projects on the house this year that I am just SO over with. I’m just not as strong or as tough as I used to be I guess. I told Lodi the other day, “I just want a little project… maybe paint something…” But we’ll be very glad to have all that we completed this year for all of the years to follow. It felt almost strange to not have somewhere to go or something planned or a project we needed to be working on. WOW what amazing content you all share, you are so incredible and inspiring! Ok so, a week ago, Thursday and Friday night we had to cover all of our plants because of hard freezing temperatures. One week later, it was literally 100 degrees. Even for northern MN that’s pretty crazy. Our luck is so great that we rented a skid steer a month ago and had no choice but to work in the yard all weekend lol. The traditional time to plant would have been this last weekend but our weather was absolutely gorgeous and gave no inkling that it would change. Yeah well, it froze HARD last Thursday and Friday night. Fortunately we don’t have a huge garden so we were able to cover it up and save it and we were able to bring our other plants indoors as well. (We entirely collapsed on Sunday lol) I am so thrilled to see our garden is already coming in! I’m so excited about our deck planters this year I filled them with herb seeds instead of flowers and they’re all starting to come up too. Welcome to the To Grandma’s House We Go Link Party #240. Last week was a whiplash for us on our little farm here. Wonderfully, Lodi and I got engaged! And then, not just two days later, we lost one of our horses 🙁 Losing horses is always so difficult and I’m not just talking about emotionally. I don’t think I can do another animal this big – its just such a huge undertaking to take care of them. We buried her in the back pasture – her favorite place for napping and sun bathing. I even had the bonus of it being a three day weekend for me so I was able to really “putter” and take my time knowing I had three days. I had two blog projects I wanted to take pictures of and I spent all day Sunday making eight quarts of turkey stock. Welcome to the To Grandma’s House We Go Link Party #222. We’ve been hit by a little bit of a cold snap that is actually more like “normal” temps this week. The last few weeks we’ve really seen some strangely dry and warm weather for this time of the year. They’re saying southern MN might not even have a white Xmas! One thing I’ve noticed above all else is that our horses and all of the little critters that visit our bird feeders are drinking more water than they have all year. Not to brag but I officially have all of my Xmas shopping done. Have I mentioned I don’t like deadlines? lol I just can’t stand the anxiety of an important gift not showing up until the last minute! Got a dusting of snow this last weekend that is almost gone – we might see a brown Thanksgiving for a change! We got the wall and door in, officially making our back hall/closet into its own small room! So excited to have that project done. Strange for us this time of year but no one is complaining. (We were missed by a huge snow storm that hit most of the state last week.) Welcome to the To Grandma’s House We Go Link Party #217. Well the weather reprieve was absolutely glorious. I can’t remember if I’ve EVER seen 70 degrees in November lol. I couldn’t sleep at all Sunday night and finally realized it was because of the sound of the rain pounding on our roof. It sounded amazing and sad in a way. I knew by Monday night the rain would turn to snow and it would likely be the last time we had rain in a very LONG time. Welcome to the To Grandma’s House We Go Link Party #216. OMG You guys I am SO excited – its going to hit 60 degrees today. We have one last truly beautiful week and weekend before it looks like winter will fully arrive. What a gift! I had my first weekend alone here in over a year and I took the opportunity to tackle some projects and just be incredibly boring. A little bit of gaming, a little bit of wine, I never left the house except to feed the animals. I ate pizza and didn’t even bother putting on a bra lol it was pretty great though incredibly quiet! Welcome to the To Grandma’s House We Go Link Party #213. We got the majority of our “before winter” work done though it does seem like an endless list… Probably because we keep adding to it! I want to replace the door on the south side of our house and move it into my workshop. This will accomplish a couple of things. Firstly: It’ll be awesome to have an exterior door in the workshop and secondly the current door is total crap and was letting out a lot of heat last winter. I fear I may have already missed our last “nice” fall day to get some decent fall pictures for my blog post next month. *Loud Sigh* To be fair, I think I only had all of two days when the tree color was good and it was actually nice outside before all the leaves hit the ground. Welcome to the To Grandma’s House We Go Link Party #209. Its that time of the year again and I just HAD to make chili. Fortunately Lodi loved my Minnesota chili 🙂 I call it that because I’ve spent enough time in southern states to know that its basically unrecognizable to their own form of chili! Here’s the recipe: 1lb ground beef, 1 chopped onion, 1 chopped bell pepper, 1 can hot chili beans, 1 can navy beans (rinsed), 1 can tomato sauce and 1 can chopped tomatoes. I always brown and caramelize the first three ingredients first together before adding the tomato sauce and chopped tomatoes. Then I simmer that for a good half hour before adding the beans so they don’t get mushy. Its perfect with grilled cheese and for a cold fall day! I add garlic salt, black pepper, chili powder, paprika, cumin and red pepper to give it more of a kick too! What are your staple fall recipes? Read the rest of the post »

She has a long road of recovery ahead of her but she’s getting a little bit better very day. I’m taking care of her in any way that I can. Lodi held down our fort while I was gone – only five baseball bat sized cucumbers to be fed to the horses from the garden lol Otherwise we got to try our first watermelon! Welcome to the To Grandma’s House We Go link party #206. Many of you know my Mom has been going through cancer treatments since January. Four months of chemotherapy, five weeks of radiation and now, the last step: surgery. I brought her down to the Mayo clinic in Rochester yesterday morning and tomorrow she will be having surgery. Its just the two of us and its a long procedure and, of course, I’m worried sick. All surgery is a risk though this is, fortunately, not considered a very high risk surgery. I love this moment with the garden (I would totally garden anyway regardless of this moment) but the fact that by August of every year its already paid for itself is pretty darned cool! Just a few cucumbers so far but we’ve had several meals of green beans, peas and beats! Kohlrabi is on the way and so are the melons. The herbs just make me silly happy though and our oregano, basil, thyme and dill just did amazing this year. I love stuffing chicken breasts with Parmesan and that whole combo of herbs – MAJOR YUM. Welcome to the To Grandma’s House We Go link party #202. Our garden has begun to produce in earnest and its just so wonderful to have the organic fresh produce. We’ve had several meals of fresh peas, green beans and beats now. Cucumbers are coming soon and the melons and kohlrabi are on their way. To be fair it is mid December and I do live in northern MN so I guess I can’t really complain about our inevitable winter weather. Lodi has been hinting at taking us somewhere warm in February and that’s sounding better and better by the minute. I myself ate WAY too much over two Thanksgivings. Lodi and I were literally wattling home to hit the couch and unbutton our pants and remove our belts. I have been on a “diet” for almost a year now. I have lost nearly 25 pounds. I’m pretty sure I ate as much food on the first Thanksgiving as I would normally eat spread out over several days. Welcome to the To Grandma’s House We Go Link Party #166. Fortunately for us that awful cold snap left and was followed by some really not bad highs in the 30s and 40s! I’ll take it. It felt great after seeing negatives temps this early in the year. I took the weather as a sign to fill my horses’ stock tank and do a few more chores outside that are particularly more crappy to do in cold weather. I was so excited for this last weekend, I haven’t had a TON of time to really work on my house and with the weather already turning I took this last Monday off so I could have three days to really get some things done before winter. And then Saturday morning rolled around and I had a bonfire in my throat, I couldn’t swallow, I hurt everywhere and all I wanted to do was cry but it hurt too much to cry. It hit me so hard and so fast it was just crazy! My high tempt that afternoon hit 102.9. My best friend was seconds from throwing me in a cold shower or rushing me to the ER. This last weekend I made another six quarts of refrigerator dill pickles and four quarts of a refrigerator bread and butter recipe that I’ve never tried before! I’m very excited to see how they turn out. Besides that I’ve officially procrastinated on every single thing I could possibly do outside besides ripping the stucco off the house lol. Welcome to the To Grandma’s House We Go Link Party #151. Finally this weekend I didn’t have to leave the house! Summer weekends are always so crazy I’m to the point now where I have to schedule weekends in where I can just STAY HOME no matter what lol. My mom came over and we picked cucumbers and made ten quarts of refrigerator pickles and, of course, totally stuffed ourselves on fresh cucumbers while we were at it. My garden has just begun really producing for me, its just amazing to have fresh vegetables every day for dinner. I also finally added two beams and four posts to underneath my deck, I also cemented them in. Its been on my to do list since this spring when I noticed a little bit of sag and bounce that was driving me crazy! Even with all the activities I could be doing, honestly, just being home has really become my very favorite thing. I hope you’re all having a wonderful summer, on to the Party! Welcome to the To Grandma’s House We Go Link Party #150. Well, its basically August and my garden has started producing cucumbers like crazy. I purchased all my canning supplies and am ready to go. I haven’t yet worked up the courage to can “for real” but my refrigerator pickles from a couple years ago lasted until I ate the last jar nearly a year later. So that’s the plan this year, lots of refrigerator pickles and green beans too. My pepper plants have basically done nothing… not sure what happened there.
